May is one of my favourite months for a very good reason, there’s two bank holidays! Whilst lockdown was very much still in place, me and my partner were both off and still made the most of it. So here’s a look at our long weekend.
Friday 8th May
Bank holidays usually fall on a Monday but this one was special as it marked 75 years since VE Day (Victory in Europe Day).
We started our day by going food shopping and doing a few other errands, then we put our homemade bunting up and had afternoon tea!
We had Ogg’s mini Victoria Sponges, the new Bosh! Lemon Drizzle Cake, crisps, mayonnaise, cheese & cucumber sandwiches, as well as chicken tikka ones. All vegan of course!
We listened to Vera Lynn and put our sunny flowers in a vase, before enjoying the sunshine in the garden.
As evening came we had a delicious barbeque where we tried some new foods out like these Chorizo Puppies from M&S.
After dinner we watched some special VE Day shows on TV which were very moving, as well as the Queen’s speech.
Saturday 9th May
On Saturday we did a weights and yoga class before starting our Mexican themed date day.
We decorated the table with some fun and colourful decorations we bought from Ginger Ray. We don’t usually go all out, but the decorations made everything feel more special.
For lunch we made the most delicious (vegan) nachos.
Then spent the afternoon getting dressed up and dancing to Mexican music.
As we was still pretty full from lunch we made cocktails, including this mango margarita.
As we’d had a few cocktails we decided to make some easy ‘mince’ tacos instead of the elaborate ones we had planned and they was great!
We finished our night with churros and a dark chocolate dipping sauce. Yum!
Sunday 10th May
Sunday was a much more relaxed day for us, we got up a bit later and did a pilates class.
In the afternoon we went for a walk and read in the garden, where we tried a fruity non-alcoholic gin that Aldi sell and I’ll be honest, it wasn’t great!
At least it looked photogenic!
